Well,
it’s a great way of using up my leftover fried salmon and of course, the rice.
Ingredients
2
cloves of garlic, finely chopped
½
green onion, roughly chopped
Salmon,
marinated with salt and black pepper, shredded
1
chili, thinly sliced
1
tbs fish sauce, to taste
2
spring onions, finely chopped
1
handful of shredded vegetables, spring greens and cabbage
3
cups of rice
Ground
black pepper, to taste
2
tbs oil
1
egg
Method
Season
the rice with fish sauce and have a taste. Saute the garlic and onion over a
medium heat of frying pan until it becomes aromatic.
Add
the salmon and fry until the salmon is cooked. Add the vegetables and cook
until the vegetables become tender.
Add
the rice and stir-fry in the pan for about 5 minutes or until the rice is hot
all the way through. Make a well in the middle of the pan and add the egg. Mix
all the ingredients together and cook for another 5 minutes until the egg is
cooked.
Taste
the dish. Add some salt, sugar or fish sauce. Garnish with the spring onion.
