Egg Frittata


When we have a lot of eggs in the fridge.

Ingredients

4 eggs
1/4 tsp salt
1/4 tsp ground black pepper
1 white potato,roughly chopped
1/2 red onion
1 cup spring green
1 garlic
1 tbs olive oil
1 tsp lemon juice
1/2 cup shredded cheese
mayonnaise 

Method

Heat up the olive oil in a medium skillet over medium heat. Put in some garlic and onion. Cook until it becomes tender and then add potato. Cook for about 10 minutes. Mix in some green spring and season with salt and ground black pepper. Continue cooking until the green spring is wilted and place it into the greased muffin.

In a bowl, beat the eggs and preheat the oven to 150 degree Celcius. Pour the egg mixture into a muffin tray. Sprinkle with cheese. Bake for 20 minutes and serve with mayonnaise.
